Here’s a step-by-step guide to crafting this traditional delight.

Ingredients:

  • 1 cup coriander powder
  • 1/2 cup wheat flour
  • 1/2 cup ghee (clarified butter)
  • 1/2 cup sugar
  • 1/4 cup chopped nuts (almonds, cashews, pistachios)
  • 1/4 cup melon seeds (magaz)
  • 1/4 cup desiccated coconut
  • 1/2 tsp cardamom powder
  • A pinch of saffron strands (optional)
  • Edible gum crystals (gond), lightly fried (optional)

Instructions:

  1. Roasting Coriander Powder: Begin by dry roasting the coriander powder in a pan on low heat. Stir continuously until it turns aromatic and slightly changes color. Set it aside to cool.
  2. Preparing the Base: Heat ghee in a heavy-bottomed pan. Add wheat flour to it and roast on low flame until it turns golden brown. This process should be done with patience to avoid burning.
  3. Incorporating Ingredients: Now, add the roasted coriander powder to the wheat flour-ghee mixture. Stir well to combine. Continue to cook for a few more minutes.
  4. Adding Sweetness: Gradually, add sugar to the mixture and mix thoroughly. The sugar will melt and combine with the other ingredients, creating a syrupy texture.
  5. Enhancing Flavor: Add cardamom powder and saffron strands (if using) to the mixture for a delightful fragrance and color.
  6. Nuts and Seeds: Toss in the chopped nuts, melon seeds, and desiccated coconut. These ingredients provide a satisfying crunch and nutty flavor.
  7. Optional Gond: For an extra layer of texture, you can add lightly fried edible gum crystals (gond) to the pan. They will puff up and add a unique element to the Dhaniya Panjiri.
  8. Cooling and Storing: Allow the Dhaniya Panjiri to cool completely before transferring it to an airtight container. It can be stored for several weeks.
