In the diverse culinary landscape of India, mango pickle is a staple in households across the country. Known locally as ‘Aam ka Achaar,’ this condiment is celebrated for its bold flavors and the nostalgia it evokes, representing a blend of tradition and taste.

The Ingredients

The journey of making mango pickle begins with selecting the right type of mango. Typically, small, raw, and firm mangoes are preferred. These are washed, dried, and cut into small pieces, retaining the skin for its texture and flavor. The other key ingredients include mustard oil, which acts as a preservative and adds a unique aroma, and a variety of spices such as mustard seeds, fenugreek seeds, fennel seeds, red chili powder, and asafoetida. Salt is another crucial ingredient, both for taste and its preservative qualities.

The Preparation Process

Preparing mango pickle is almost a ritualistic process. The cut mangoes are mixed with salt and left to dry under the sun for a few days. This process reduces moisture, which is essential for increasing the pickle’s shelf life. Once dried, the spices are roasted and ground. The mustard oil is then heated and cooled to a specific temperature before being mixed with the spices and mangoes. This mixture is again left in a sunny spot, allowing the flavors to blend and the mango to soften slightly.

Regional Variations

Mango pickle varies greatly across different regions of India. In North India, the pickle is typically spicier and oilier, while in South India, it often includes a tangy addition of vinegar and less oil. Each region has its unique blend of spices, creating a wide variety of flavors under the umbrella of mango pickle.

While mango pickle is a flavor enhancer, it also has health benefits. The spices used are known for their digestive properties. However, it should be consumed in moderation due to the high salt and oil content.

Mango pickle is stored in clean, dry jars and ideally kept in a place where it receives some amount of sunlight. It is served as an accompaniment with meals, adding a burst of flavor to everyday dishes.
