History of Litti Chokha:

Litti Chokha’s origins can be traced back to the ancient Magadha Empire, which flourished in the eastern part of India. It is believed that the dish was initially prepared by farmers and laborers as a simple and filling meal that could be easily transported and consumed during long working hours. Over time, Litti Chokha evolved into a popular delicacy, gaining widespread recognition for its unique flavors and textures.

Recipe for Litti Chokha:

Litti Chokha is a complete meal in itself, consisting of two main components: Litti, a round wheat bread stuffed with a savory mixture of sattu (roasted chickpea flour), spices, and herbs, and Chokha, a mashed potato dish seasoned with mustard oil, onions, ginger, and chilies.

Preparation of Litti:

  1. Sattu Preparation: Roast chickpeas in a traditional earthen oven or a heavy-bottomed pan until slightly charred. Grind the roasted chickpeas into a fine powder using a mortar and pestle or a grinder.

  2. Stuffing Preparation: Mix the sattu with chopped onions, coriander leaves, ginger, garlic, cumin seeds, coriander powder, turmeric powder, and red chili powder. Add salt to taste.

  3. Litti Dough Preparation: Knead whole wheat flour with water and a pinch of salt to form a soft dough.

  4. Litti Shaping and Stuffing: Divide the dough into equal portions and roll each portion into a flatbread. Place a generous dollop of stuffing in the center of each flatbread and seal the edges tightly, forming round dumplings.

  5. Litti Cooking: Traditionally, Litti is roasted in a tandoor, an earthen oven, giving it a smoky flavor and a crispy exterior. Alternatively, Litti can be cooked over a charcoal grill or baked in an oven.

Preparation of Chokha:

  1. Potato Boiling: Boil potatoes until tender. Peel and mash them thoroughly.

  2. Chokha Seasoning: Heat mustard oil in a pan. Add chopped onions and saute until translucent. Add ginger, garlic, and green chilies, and saute for a minute. Add the mashed potatoes, salt, and red chili powder. Mix well and cook for a few minutes until the flavors blend.

Serving Litti Chokha:

Litti Chokha is typically served hot with a generous drizzle of ghee or mustard oil. It is often accompanied by a side of spicy chutney or pickle, adding a burst of flavors to the dish.

Location and Speciality:

Litti Chokha is a staple dish in Bihar and is widely consumed throughout the state. It is also popular in neighboring states like Jharkhand and Uttar Pradesh. The dish’s popularity has spread beyond India, with Litti Chokha now being enjoyed by food lovers worldwide.
