Literally translating to ‘royal piece’, this rich, indulgent sweet is a testament to the grandeur of Indian culinary heritage. Comprising fried bread soaked in fragrant syrup and topped with creamy rabri, Shahi Tukda is a delightful treat perfect for special occasions or to simply satiate a sweet craving. Here’s how you can recreate this royal dessert in the comfort of your home.

Ingredients You’ll Need

  • Bread slices: 6
  • Ghee or clarified butter: For frying
  • Full-fat milk: 1 liter
  • Sugar: 1 cup
  • Saffron strands: A pinch
  • Cardamom powder: 1 teaspoon
  • Mixed nuts (almonds, pistachios, cashews), chopped: 1/2 cup
  • Rose water: 1 tablespoon
  • Silver leaf (optional): For garnishing

Creating the Rabri

  1. Begin by preparing the rabri. Pour the milk into a heavy-bottomed pan and bring it to a boil.
  2. Lower the heat and simmer, stirring continuously, until the milk reduces to about half its original volume.
  3. Add half the sugar, cardamom powder, and a few strands of saffron. Mix well.
  4. Cook until the milk turns thick and creamy. Remove from heat and set aside to cool. Add rose water for an aromatic lift.

Preparing the Sugar Syrup

  1. In another pan, combine the remaining sugar with half a cup of water.
  2. Simmer until the syrup is slightly thickened. Set aside.

Frying the Bread

  1. Trim the edges of the bread slices and cut them into halves or quarters, as per your preference.
  2. Heat ghee in a pan. Once hot, fry the bread slices until golden and crisp.
  3. Remove and quickly dip them in the sugar syrup, ensuring they are coated well but not soggy.

Assembling Shahi Tukda

  1. Arrange the sugar-soaked bread slices on a serving dish.
  2. Generously spread the cool rabri over the fried bread.
  3. Garnish with chopped nuts and saffron strands. For an extra touch of royalty, add a piece of silver leaf.
